Thyme (Thymus vulgaris) is a low-growing, aromatic, woody-stemmed perennial herb in the mint family (Lamiaceae), reaching 6–12 inches high with small, oval, gray-green leaves and tiny lilac or white flowers. Native to the Mediterranean, it is a highly scented, drought-tolerant, evergreen subshrub often used in cooking for its earthy, slightly minty, and pungent flavor.
