Romaine lettuce (Lactuca sativa var. longifolia), or Cos, is a, upright, annual cool-season leafy vegetable. It features long, narrow, crisp, and sturdy leaves that are deep green on the outside and creamy-yellow inside. The plant typically reaches 12–24 inches tall with a dense, loaf-shaped, crisp-textured head.
