The saffron plant (Crocus sativus) is a small, 3-to-6-inch-tall perennial grown from underground bulb-like stems called corms. It features narrow, grass-like green leaves and striking purple-to-lavender fall-blooming flowers. Inside each blossom sit three vibrant, bright red-orange thread-like stigmas, which are harvested to create the prized spice.
