Blistered Shishito Peppers with Lemon Garlic Dipping Sauce

Growing shishito peppers and don't know what to do with them? This is one of our favorite recipes for those thin walled, mild peppers. It makes a great snack or even finger food appetizer for your next get together. The best part is there are so many add on options that you can truly customize the recipe to make your own signature dish.
Blistered Shishito Peppers
Ingredients:
1 - Tablespoon - Olive Oil
8 - oz - Shishito Peppers (whole stem on)
1 - teaspoon - granulated garlic
Sea Salt (or flake salt) & Coarse Black pepper for garnish
Optional Ingredients/Add ons:
1 - teaspoon fresh ground ginger
1 - teaspoon low sodium soy sauce
Red Pepper Flakes to taste
Sesame Seeds for garnish
Steps:
- Clean and dry your shishito peppers, in a mixing bowl or Ziplock back combine peppers, olive oil and garlic powder. Toss to coat evenly.
- Heat a large cast iron skillet over high heat. When drops of water sizzle off the skillet, it is ready.
- Arrange coated peppers in single layer on skillet, cook 3 - 4 minutes without stirring, blistering peppers. Flip peppers and cook additional 1-2 minutes. Peppers should be blistered in spots, puffed, and tender.
- Sprinkle with flake salt and coarse ground pepper.
- Remove to serving dish and serve with Lemon Garlic Dipping Sauce
Lemon Garlic Dipping Sauce
Ingredients:
1/2 - Cup - Mayonnaise
1 - Tablespoon - Lemon Juice
1/3 - teaspoon - granulated garlic
1/8 - teaspoon - cayenne pepper (or more to taste)
Steps:
- Mix all ingredients in mixing bowl
- Transfer to serving dish, allow to set in refrigerator a minimum of 30 minutes, overnight gives optimal flavor
Optional Add Ons:
- Add 1 teaspoon fresh minced garlic and 1 teaspoon of soy sauce after you turn over the peppers to add more depth of flavor
- Sprinkle with red pepper flakes to add more heat
- Sesame seeds make a great garnish, sprinkle after cooking.
